Categories are listed on the very bottom of every Wikipedia article. Just scroll to the bottom and you will see the list there.

When you click "Edit" on the VisualEditor you can then click on the Category bar at the bottom of the page and a pop up will appear.

You will see a field which can autocomplete category names. For example, start typing in "American physicists" and you'll see the options available to you there. Think about the article you're working on? Is it a biography? Is it relevant to any specific field (chemistry, physics, history, english, etc)? Type in your key terms. Once you've chosen the appropriate categories, you can save the page just as you would with any other edit.

In order to understand how categories work in general, you can review the frequently asked questions about categories which explains why we categorize articles and how that categorization is maintained.

While categories look complex, most of that complexity is overstated or not directly related to adding broad categories for new articles. One trick to find appropriate categories is to look for similar articles--people in the same field or from the same place, or conceptually similar/related pages, depending on the subject. Those articles will often have some categories which are shared with your article and may have categories you didn't know existed.
